of Yellow Dock Tea |

Sometimes referred to as curled dock , because of its twisting leaves, Yellow Dock is native to Europe and north Asia. Yellow Dock is found nearly worldwide and produces copious quantities of seed each fall making it almost impossible to eradicate. Early settlers and Indians utilized the entire Yellow Dock plant. The seeds were pounded into meal for eating, while the roots were used for its health properties and as a deep yellow dye. The leaves were prepared and cooked like spinach, ornamentally displayed in flower arrangements and, depending on their maturity, could produce either a red, gold or dark green dye.

The best way to make a good tasting cup of tea is by the infusion method. Place one tea bag into a cup and add no more than 6 oz. of boiling water. Let steep for 3 minutes and remove the bag. Press the bag before removing to enhance the flavor. Add honey to sweeten.

| From the information found on the internet, it's the root of the plant that is used, not the leaves. I can't find any information about beneficial effects of the leaves. |
